When did you first take an interest in catering?

I was a sales manager supplying seafood to various restaurants and I felt I had a love for the customer service market.

How would you describe the style of food served in your restaurant?

Traditional pub food. Although for the quality of food served, the prices are reasonable. We don’t want to compete for the two-for-one type of business, as I feel there are enough places doing that already.

Do you have a signature dish? If so, what?

Our specials board allow us to be creative and give a different choice from the norm, for example the Jamaican pork which uses sugar, lime, ginger and a dash of rum.

What would you order from your own menu?

If I wanted a good hearty meal I would order the lasagne. It is just about perfect, but my no.1 choice would be steak. I believe we have the best steak in the town and cook it to perfection.

Your favourite vegetable, and why?

Has to be asparagus, the texture and flavour are brilliant and it’s a very under-used vegetable.

And favourite dessert?

I don’t think you can beat a good cheesecake although bearing in mind the colder weather is on its way, apple crumble and custard is also hard to beat!

Do you cook a lot at home? What sort of food?

I do like to cook when not working but there isn’t always the time to create something extravagant. I tend to stick to things that the family like, such as bolognese and other pasta dishes.

Where else locally do you like to eat?

I like Texicans in Old Town. Other than that it’s good to have a Chinese too.
