When did you first take an interest in cooking, and when did you decide you wanted to become a chef?

I used to watch my mum cook at an early age and also I was in the forces for just under seven years and travelled around the world a lot. These two combined to make me really take a shine to cooking and exploring different dishes.

Where did you do your training?

I trained at St Vincent College in Gosport, Hampshire. From there I have expanded my knowledge on various courses – I recently completed my Level 4 advanced food hygiene with a distinction.

Do you have a signature dish? If so, what?

Myself and my team have created a dish for Bushwackers which is the Ultimate Southern Fried Chicken Burger. After being seasoned with our secret blend of herbs and spices, the chicken comes on a fresh ciabatta with bacon, cheese, onion rings, side salad and gourmet chips. Last week we sold 27 of them in just 30 minutes!

What would you order from your own menu?

I’d always go for the fillet steak because the cuts we get from our butcher are fantastic and the best quality meat I have ever used.

Your favourite vegetable, and why?

I actually really enjoy mushrooms, because you can have them with anything and you can really spice them up.

And favourite dessert?

I really like a good cheese board with a glass of port after my dinner. I love a variation of cheese with crackers and different pickles.

Do you cook a lot at home? What sort of food?

I will always do the big family dinners, such as Christmas and Easter, and any get-togethers. But sometimes it’s nice to let my partner cook for me!

Where else locally do you like to eat?

If I go anywhere to eat I tend to just go on recommendations, which are usually out in the country somewhere. I also do like the local curry houses.
