Devizes bistro owner Philip O’Shea is opening his doors six nights a week in response to customers’ demand.

Currently The Peppermill, in St John’s Street, is open on Thursday, Friday and Saturday nights, but Mr O’Shea will open it on other nights of the week starting next week.

He said: “Friday and Saturday nights have been fully booked for the last eight weeks. People keep ringing up wanting us to open on other nights, including Monday. I don’t know how much demand there will be for it to be open Monday to Wednesday nights, but when I went to Pizza Express on a Wednesday night with my daughter it was packed. We will do all sorts of offers and special nights such as steak nights to get people in.”

The Peppermill will be open from 5.30pm to 10.30pm Monday to Wednesday. It is nearly two years since the bistro opened. The site was previously an estate agency which Mr O’Shea owned for 15 years, but because of the economic downturn he converted it into a bistro.

The Peppermill formerly had a delicatessen, but it was not as successful as the bistro so Mr O’Shea removed it and used the space for extra tables, bringing the number of covers to 70.

He has also taken on an extra chef, taking the number of chefs to three. He also expects to employ more front of house staff.
