Market manager Kardien Gerbrands talks about Swindon farmers' markets
I’VE been enjoying the comforting aspects of the potato recently with this week’s highlight a mashed potato dish with crushed roasted garlic, salt, olive oil and lemon juice.
To go with it I bought one of each type of the fishcakes handmade by Paul the Fishman and available every week at the market.
They do four types of fishcake – a mixed white fishcake with fresh parsley and cracked black pepper; a mixed smoked fishcake with fresh dill pepper and ground turmeric; a salmon fishcake with horseradish and fresh dill; and finally a spicy crab cake with both white and brown crab meat, fresh coriander fresh ginger and a mild chilli.
The fishcakes are £1.50 each or available on a sharing deal of any four for £5.
All the fishcakes are gluten and dairy free with no additional additives or flavourings and will last two days from Sunday’s market or can be frozen. I tried a quarter of each flavour and had this with steamed kale and roasted mushrooms, carrots and parsnips. Superb!
You can also find fresh dressed crabs at the stall which are a mixture of brown and white crab meat with no added rusk or breadcrumbs. So all you get is fresh picked best crabmeat packed into the shell. They are £3.95 each and always have a good three day life from purchase on Sunday. Again these can be frozen. Orders can be taken for these and a large variety of fresh fish at info@paulsfish.co.uk which can then be collected on the Sunday.
