An enterprising Chippen-ham chef has decided to go it alone by creating a pop-up restaurant in the town.

Dan Wyatt, 27, has worked in hotels and restaurants in Wiltshire and the Cotswolds for the past 12 years. He won a number of accolades when he was head chef at The Potting Shed in Crudwell, including the Good Pub Guide’s dining pub of the year.

Now he has decided to branch out as a personal chef and his first solo venture will be a pop-up restaurant from November 30 to December 2.

The venue will be announced nearer the time, but it will be a pub in Chippenham and perhaps not one where people would expect it.

Mr Wyatt, who has lived in Chippenham all his life and went to Sheldon School, said: “I’m aiming for a relaxed, rustic, friendly atmosphere where everyone can feel comfortable. I want to challenge people’s expectations of eating out – that you don’t have to go to a well-known restaurant to get amazing food and fantastic service or that going out for good food doesn’t have to be intimidating.

“I want to create an eating experience that everyone can appreciate – from food critics to the man on the street.”

He describes his food as classic British food that is quirky and exciting.

Dishes include a starter of full English ravioli, black pudding and tomato compote and HP sauce jus, and a dessert of an ice cream cornet made out of stollen and gingerbread ice cream and crystallised ginger.

The cost is £32 per head and a percentage of food and drink profits will go to Wiltshire Air Ambulance.

He said: “I think that learning to cook professionally gives you an extremely strong work ethic, requires flawless outcomes and is extremely rewarding.”
