Work is underway on a new South American restaurant due to open in Greenbridge retail park later this year.

Scaffolding currently surrounds the building that used to be Chiquitos and inside contractors are putting together what will be known as Fiesta De Cuba. 

The new venture marks a significant investment from the same people behind the Ridge Bar and Grill in Shaw Ridge, West Swindon

The twin brothers behind the project, Luke and Scott Jacobs did not want to reveal how much they have ploughed into it, but said: “This is something we’ve been wanting to do for such a long time.”

“We’ve put years-worth of research into this. We’ve submerged ourselves in the culture and cuisine to make sure we do it properly.”

The main attraction will be a combination of tapas and main plates prepared by a chef who has South American influence, and a great array of cocktails, as well as a traditional South American rum bar. 

The interior, although not yet finished, is made up of vibrant oranges and blues with art-work done by local artist Adam Lane and his team. 

General Manager Tom Steele explained this was exactly what they were going for. “We want it to be an enjoyable laid-back environment that reciprocates what we’ve done before.

“But we also want it to be a vibrant, fresh and really fun alternative to what’s already here for the people of Swindon.”

Plans for the venue include regular performances from Latin bands and DJs playing South American music

The restaurant is currently in the process of recruiting, but is still finalising the total number of staff needed.

The Jacobs brothers explained why they wanted to come to the retail park, which has recently undergone changes including the opening of a new Lidl store.

“This side of Swindon doesn’t really have anything like this so that’s definitely one of the reasons. But also business is picking up again and the empty units are slowly getting filled so we’re confident there will be a good demand and footfall here.”

Fiesta De Cuba will open to the public on Valentines Day.
